About the piece: This is a very personal choice of food and it is one of my favorite dishes ( Nam Prik Kapi ) that my father made regularly. It is fermented shrimp paste with chili, garlic, and red onion. It’s very umami and is served with fresh or steamed vegetables, vegetable omelettes, and Thai mackerel.
